Homemade Spicy Wontons Inspired by Din Tai Fung

Din Tai Fung makes these insanely good shrimp and pork spicy wontons—tender, silky, tossed in this addictively tangy chili sauce. Learn how to make them and learn what pitfalls to avoid.

Shrimp and Pork Wontons
5oz shrimp
8oz ground pork
white pepper + salt
2 tbsp sesame oil
2 tsp corn starch
1 egg white

1 tbsp shaoxing wine
1 tbsp ginger scallion water (1 small knob of ginger microwaved with a sliced scallion in enough water to cover. Heat for 1 minute)
1 package of Wonton wrappers
Spicy Sweet Wonton Sauce
8 tbsp oil
1 tbsp Chili flakes (I used these from Mala Market)
1/2 tsp Five spice
1/2 tsp Sichuan peppercorn
2 cloves garlic, grated
3 tbsp sweet soy
Water

Step 1: Make Wonton Filling
Remove the peel and digestive tract from the shrimp. Chop them with a knife so they're small but not a paste; some texture is good here. Add that to a bowl with the ground pork. Add sesame oil, corn starch, white pepper, salt, an egg white, shaoxing wine, ginger scallion water and msg. Stir this mix until the color is lighter and the pork has become sticky. Set this in the
Step 2: Fill Wontons
Get your wonton wrappers and a small bowl of water (this will help seal the wontons). Place roughly 1 tsp of filling in the center of a wonton wrapper. Dip your finger in the water and run it along the unfilled edge. Fold one corner over to the opposite corner (I fold the closest corner over the filling to connect with the furthest corner). Seal the edges so it's completely closed. It should look like a triangle. Take the two side edges and pull them to each other. Use a little water to place one of the edges below the other (it should look like a little hat or belly button). Use the video above (starting at the 6 minute mark) for a guide. Work through all of the filling until there's none left.
Step 3: Make Sauce
In a heatproof bowl, add chili flakes, five spice, ground sichuan peppercorns, and grated garlic. Heat the 8 Tbsp of oil to 360f and pour over the chili mix. Let that sizzle away and stir it once it's cooled slightly. Season this with sweet soy, chicken powder, and msg.
Step 4: Cook Wontons
Bring a large pot of water to the boil (as much as you'd use for pasta) and add in your preferred wonton amount. Stir the water gently as they go in so they don't stick directly to the bottom of the pan. Once the wontons float, they need about 45 seconds until they're completely cooked. Drain them and add them to a bowl with as much spicy sauce as you like. Garnish with cilantro or green onion and enjoy some very delicious wontons.
