Pumpkin Pasties From Harry Potter

I've always wondered what the pumpkin pasties from Harry Potter tasted like, so I decided to make them myself. Spoiler alert, they're incredible. Also, J.K. Rowling has said incredibly terrible and heinous things; I strongly disagree with her.

2 cups ap flour
3/4 tsp salt
1/2 tsp baking powder
16 tbsp unsalted butter, cold
1/2 cup sour cream, cold
Filling
1 can libby’s pumpkin, spread out on tray and caramelized, 425f for 30 minutes
3/4 cup sugar
1 egg yolk
2 tbsp dry milk powder
1 tsp pie spice
1/2 tsp cinnamon
1/4 tsp cardamom
1 tbsp cornstarch
Pinch of salt
Icing
3 cups powdered sugar
5-6 tbsp milk
Step 1: Make Crust
In a large bowl, mix together 2 cups ap flour, 3/4 tsp salt, and 1/2 tsp baking powder. Cut the butter into tablespoon pieces. Using your fingers, squeeze the butter into the dry until no large pieces remain. Mix the sour cream into this until it almost holds it's shape. The dough will be dry and crumbly. Form the dough into a disc and wrap tightly in plastic wrap. Place this in the fridge for at least 30 minutes.
Step 2: Make Filling
For the filling, you need the caramelized pumpkin ready and cooled. If you haven't done that, start there. Into a bowl, add the caramelized pumpkin puree, 3/4 cup of sugar, 1 egg yolk, 2 tbsp dry milk powder, 1 tsp pumpkin pie spice (if you have it), 1/2 tsp cinnamon, 1/4 tsp cardamom, 1 tbsp cornstarch, and a pinch of salt. Mix that until fully combined. Cover and place in the fridge while you roll out the dough.
Step 3: Fill and Bake
Heat oven to 425 fahrenheit. Prep a sheet a tray with a piece of parchment paper. Take the dough disc out of the fridge and place it on a floured worksurface. Roll the dough out to roughly 1/8 inch thick.
Use a 6 in circle dough or biscuit cutter to cut dough rounds. You should get 12 handpies.
Place a heaping tbsp of pumpkin filling into each dough round. Use a little water around the edge of each pie to help seal the edge. Fold one half over to form half moons and crimp with a fork. Poke a hole in the top with a knife or toothpick. Place the pies on the tray and bake for 20 - 25 minutes. Look for an even gentle browning on the crust. While they bake, combine the powdered sugar and milk to form a thin glaze.
Once baked, let the tray cool down slightly before removing the pies. Set them on a wire rack then pour over the glaze to coat. Enjoy these with your favorite Harry Potter movie or book, preferably by a nice fire.
