How To Make Korea's Fire Chicken | Buldak

Buldak with cheese

1+ lb chicken thigh, cubed

2 tbsp gochujang

2 tbsp gochugaru

1 tbsp soy sauce

1 tbsp chicken powder

1 tbsp sesame oil

1/2 yellow onion, sliced

3 cloves garlic, grated

Knob of ginger, grated

1 tbsp sugar


1-2 tbsp water as needed

Cooking oil

Green onion, sliced

Mozzarella cheese, shredded


Step 1: Marinade The Chicken

Into a marinating bowl, add the chicken thigh, 2 tbsp gochujang, 2tbsp gochugaru, 1 tbsp soy sauce, 1 tbsp chicken powder, 1 tbsp sesame oil, 1/2 yellow onion, 3 cloves grated garlic, grated ginger, and 1 tbsp sugar. Mix together until the chicken is fully coated and use a little cooking oil if the mix is looking too dry. Cover and set in the fridge for at least 30 minutes.


Step 2: Cook The Chicken

In a pan that can go into the oven, add the chicken and all of the marinade then begin heating it over medium. Once the marinade comes up to a simmer, drop the heat to medium low so it can reduce without the sugar burning. Continue mixing and cooking until the chicken has fully cooked and turned opaque; usually around 25 minutes. There should be a layer of sauce left in the pan, but if it's too dry, add water. Turn the heat off, add a handful of shredded mozzarella cheese and place the pan under the broiler to brown the cheese. When it's bubbly and brown, remove it from the oven and top with green onion. Enjoy with rice, lettuce leaves for wraps, or in a taco... It's so delicious and very well spiced.
