Torchy's Diablo Sauce

When it comes to chain restaurants, Torchy's Tacos has one of the best spicy sauces. Diablo Sauce is hot, sweet, and perfect on the world famous queso. Make this and store it in the fridge when you need that spicy kick.

Torchy's Diablo Sauce
1 Tbsp oil
2 small yellow onions
4 habaneros
4 garlic cloves
150z tomato sauce
1 tbsp vinegar
Kosher salt to taste
Step 1: Prep Veggies
Remove the stems from the habaneros but keep the seeds. Dice the onions and remove the paper from the garlic cloves.
Step 2: Cook Sauce
Add 1 Tbsp of oil to a small pot over medium heat. Add the onions, garlic, and habaneros. Cook these until the onions begin to brown but not caramelize. Add the can of tomato sauce along with the vinegar and turn the heat to low (you want this barely below a simmer). Cook that for 15 minutes, or until the sauce has reduced slightly. Stir as it cooks so nothing burns.
Step 3: Blend And Store
Let the mix cool before adding this to a blender. Blend until completely smooth and adjust the seasoning with salt. Add this to a squeezy bottle for extra usability, or just spoon it over your tacos and queso as needed. Cheers!
