The Breakfast Sando From "The Bear" Season 2

If you're like me, you probably fell in love with the breakfast sandwich from Kasama shown in season 2 of "The Bear". Sydney goes on a Chicago food crawl, and the sandwich really stood out to me. Here's my recommendation for an at home version, as Kasama is a Michelin restaurant, and I am not.
Tips and Recommendations
Use frozen store-bought hashbrowns. It's hard to achieve a perfect hashbrown at home, this saves a ton of time.
Kasama makes a custardy soft egg square for the sandwiches, but I prefer fried eggs. I tried with the egg squares and had a hard time getting it right, so I'm sticking with fried eggs for the future. If you want the exact eggs, here is a link to America's Test Kitchen.
The longganisa recipe easily makes enough for 8 sandwiches, but it keeps well if you want longganisa all week.

Kasama Inspired Sandwich
1 egg per sandwich
Buns (pandesal or hamburger)
Butter
American cheese
Hashbrown patty
Longganisa
1 lb ground pork
1 head of garlic
2-3 tbsp sugar
2 tbsp smoked paprika
1 tbsp dark soy
Annatto
1 tsp corn starch
Chicken powder, onion powder, garlic powder, cayenne pepper, salt
Step 1: Make The Longganisa
In a large bowl, mix together pork, garlic, sugar, smoked paprika, dark soy, corn starch, chicken powder, onion powder, garlic powder, cayenne, salt. Add annatto for color if you find it. A small amount is enough to add flavor and color. Mix until everything is fully combined, then cover and rest in the fridge for a few hours up to a day. Form the sausage into small balls once you're ready to make the sandwiches (a little larger than a golf ball).
In a skillet over medium low, add a little cooking oil. Using a spatula, smash a longganisa patty into the pan. Cook this over medium low to keep the sugar from burning. After the first side is browned, flip it and cook on the other side until the patty is completely cooked.
Step 2: Fry Eggs and Hashbrowns
Heat a skillet or frying pan to medium for the hashbrowns. Add enough oil to coat the pan and then add the hashbrowns. Cook until browned and crunchy. Fry an egg to your desired cook (I prefer over medium). Be sure to add the american cheese as the egg is cooking so it melts.
Step 3: Assemble
Place the hashbrown on a toasted bun, then the longganisa and the egg. Add the top bun and dig in.
