You know what they say... "To love is to lose." If you're like me and love Taco Bell more than you should, then you're well-acquainted with losing favorite menu items on a regular basis. Taco Bell removed the Spicy Potato Soft Taco this week, and instead of sulking, I decided to figure out how to make it at home. Potatoes
Ingredients (Enough for about 6 tacos)
3 large russet potatoes
1 teaspoon cumin
1 teaspoon chicken bullion powder
1 teaspoon smoked paprika
½ teaspoon cayenne pepper
Salt and pepper
Cornstarch to coat
1 tablespoon olive oil
Start by peeling your potatoes and chopping them into a large dice (about three quarter inch). Add them to a large pot and cover with cold water. Toss in two tablespoons of salt. Bring them up to a simmer over medium low heat for about 20 minutes, they should be just cooked, but not falling apart. Preheat the oven to 400f convection. Drain your potatoes and add them to a large bowl with all of the seasoning, cornstarch and olive oil. Mix generously until a starchy flavor layer forms on the outside of each potato. Pour these onto an oiled sheet tray and put them into the oven for 15 minutes. After 15 minutes, give these a good mix. They go back in for another 15 minutes. After they are done, toss in a bowl with kosher salt.
Chipotle Ranch (Baja Sauce?)
Ingredients
¼ cup mayo
¼ cup sour cream
A splash of whole milk
1 jalapeño
1 chipotle
1 tablespoon adobo
1 garlic clove
1 teaspoon garlic powder
1 teaspoon onion powder
Handful of parsley
Salt and pepper
Roughly chop your jalapeño, garlic, and chipotle before adding to a vessel to be blended (food processor, blender or stick blender). Add all other ingredients into the blender and blend until well combined. Store in the fridge until needed.
Taco Assembly
I am a fan of the classic version with shredded cheese and lettuce on a flour tortilla, but top these however you like! You could add scrambled egg and remove the lettuce for a nice breakfast taco, there are so many other options. No matter how you top these, I can't recommend these enough. Cheers!
